Ingredients

(Simple and flexible)

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced (optional)
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) white beans, drained and rinsed
  • 4–5 cups vegetable or chicken broth
  • 1 teaspoon dried basil or oregano
  • Salt and black pepper, to taste
  • Optional:
    • Pinch of red pepper flakes
    • Handful of spinach or kale
    • Drizzle of olive oil

How to Make It

  1. Warm the pot
    Heat olive oil in a large pot over medium heat.
  2. Soften the onion
    Add onion and cook until soft and lightly golden.
  3. Add garlic and herbs
    Stir in garlic and dried herbs. Cook briefly until fragrant.
  4. Add tomatoes, beans, and broth
    Add diced tomatoes, white beans, and broth.
  5. Simmer gently
    Simmer 20–25 minutes to blend flavors.
  6. Finish softly
    Season with salt and pepper. Add greens if using and simmer a few more minutes.
