This soup is naturally sweet, gently savory, and grounding. Butternut squash supports steady energy, while sage brings warmth and clarity without stimulation. It’s ideal for days when you want something comforting and familiar.

Ingredients

(Simple and flexible)

  • 2 tablespoons olive oil or butter
  • 1 onion, chopped
  • 1–2 cloves garlic, minced (optional)
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 4–5 cups vegetable broth
  • 1–2 teaspoons dried sage or a few fresh sage leaves
  • Salt and black pepper, to taste
  • Optional:
    • ½ cup coconut milk or cream
    • Pinch of nutmeg
    • Drizzle of olive oil for serving

How to Make It

  1. Warm the pot
    Heat oil or butter in a large pot over medium heat.
  2. Soften the onion
    Add onion and cook slowly until soft and lightly golden.
  3. Add garlic (if using)
    Stir in garlic and cook briefly until fragrant.
  4. Add squash and sage
    Add cubed squash and sage. Stir gently to coat.
  5. Add broth
    Pour in enough broth to cover the squash.
  6. Simmer gently
    Bring to a gentle simmer and cook 25–35 minutes, until squash is very soft.
  7. Blend until smooth
    Blend carefully until creamy.
  8. Finish softly
    Season with salt and pepper. Add coconut milk or cream if using.
