Ingredients

- 1 piece kombu or wakame seaweed (about 2–3 inches)
- 1–2 cups sliced mushrooms (shiitake, cremini, or button)
- 1 small onion or shallot, sliced
- 1 clove garlic, crushed (optional)
- 6–8 cups water
- Salt, to taste
- Optional:
- Fresh ginger slices
- Green onions
- Miso paste (added at the end)
How to Make It
- Prepare the pot
Place seaweed, mushrooms, onion, and garlic in a pot. - Add water
Cover with water. - Simmer gently
Bring to a gentle simmer. Do not boil hard. - Cook slowly
Simmer 30–45 minutes. - Remove seaweed
Remove kombu before serving to avoid bitterness. - Season lightly
Add salt to taste. Add miso only after removing from heat, if using.
