One-Pot Rice, Eggs & Greens Bowl

This dish is warm, mild, and comforting. Rice provides grounding energy, eggs offer easy protein, and greens add minerals without heaviness. It’s ideal when cooking feels overwhelming but nourishment is still needed.

Ingredients

(Simple and flexible)

  • 1 cup white or brown rice
  • 2–3 cups water or broth
  • 2–4 eggs
  • 1–2 cups chopped greens (spinach, chard, or kale)
  • Salt, to taste
  • Optional:
    • Olive oil or butter
    • Sesame oil
    • Green onions

How to Make It

  1. Cook the rice
    In a pot, cook rice in water or broth according to package directions.
  2. Add greens
    When rice is nearly done, stir in greens and cook until wilted.
  3. Add eggs
    Make small wells in the rice and crack eggs directly into the pot.
  4. Cover and cook
    Cover and cook gently until eggs are set to your liking.
  5. Season and serve
    Add salt and finish with oil or toppings if desired.
