- 1 cup dried green or brown lentils, rinsed
- 5–6 cups vegetable broth

How to Make It
- Warm the pot
Heat olive oil in a large pot over medium heat. - Soften the vegetables
Add onion, carrots, celery, and cook until softened. - Add lentils and spices
Stir in lentils, cumin, paprika, and bay leaf if using. - Add broth
Pour in broth to cover. - Simmer gently
Bring to a gentle simmer. Cover and cook 35–45 minutes, until lentils and vegetables are tender. - Finish softly
Add salt to taste. Stir in greens during the last few minutes if using.
