Salmon, Leek & Potato One-Pot

A gentle, nourishing one-pot meal for winter fatigue, mood support, and brain health

This dish combines omega-3–rich salmon with grounding potatoes and gentle leeks. It’s light yet satisfying, and ideal when you want something warming that doesn’t feel heavy.

Ingredients

(Simple and flexible)

  • 1 tablespoon olive oil or butter
  • 2 leeks, cleaned and sliced
  • 3–4 potatoes, diced
  • 4 cups vegetable or fish broth
  • 1 pound salmon fillet, cut into chunks
  • Salt, to taste
  • Optional:
    • Dill or parsley
    • Lemon slices
    • Black pepper

How to Make It

  1. Warm the pot
    Heat oil or butter in a pot over medium heat.
  2. Soften the leeks
    Add leeks and cook gently until very soft and fragrant.
  3. Add potatoes and broth
    Add potatoes and pour in broth to cover. Simmer until potatoes are tender.
  4. Add salmon
    Gently place salmon pieces into the pot.
  5. Cook briefly
    Simmer 5–8 minutes until salmon is just cooked through.
  6. Season and finish
    Add salt to taste. Finish with herbs or lemon if desired.
